Chicken Chimichangas

Irresistibly delicious.

Ingredients:

8 oz cream cheese
1 1/2 tablespoons taco seasoning
8 oz shredded pepper jack cheese
2 chicken breasts, cooked and shredded
6 flour tortillas, 14-inch
Prepared queso, for topping
Taco sauce, for topping
Sour cream, for topping

Directions:

  1. Preheat oven to 350° F. Grease a large baking sheet with cooking spray.
  2. Stir together the cream cheese, taco seasoning and pepper jack cheese in a large mixing bowl. Add the chicken and stir together until well combined.
  3. Spoon an even amount into the center of each flour tortilla.
  4. Tuck in sides and roll up each similar to a burrito.
  5. Lay them seam side down on the baking sheet. Spray tops of tortillas with cooking spray.
  6. Place into the oven to bake for 15 min.
  7. Flip chimichangas and bake for an additional 15-20 minutes, until the top is golden brown.
  8. Remove from the oven and transfer to serving plates. Top chimichangas with queso, taco sauce and sour cream. Enjoy!
