Chocolate Covered Strawberry Truffles

Sweet little bite-sized morsels.

Ingredients:

1 cup freeze dried strawberries
1/2 cup blanched slivered almonds
1 cup shredded coconut
1 teaspoon honey
4 oz dark chocolate

Directions:

  1. Combine the strawberries, almonds, coconut and honey in food processor. Pulse until a fine powder, stopping to scrape the sides occasionally.
  2. Scoop out about 1 rounded teaspoon of the mixture and form into a ball.
  3. Place the balls on a plate. Place into the freezer to chill for 15 minutes.
  4. Remove from the freezer. Set aside. Line a baking sheet with parchment paper.
  5. Melt the dark chocolate in a saucepan over low heat, stirring frequently.
  6. Once melted, turn off the heat. Use tongs to dip the truffle balls into the melted chocolate. Place the dipped balls on the parchment-lined baking sheet. Let sit for the chocolate to set.
