Chocolate Covered Strawberry Truffles





Serves 26 |
Sweet little bite-sized morsels.
Ingredients:
| 1 cup freeze dried strawberries |
| 1/2 cup blanched slivered almonds |
| 1 cup shredded coconut |
| 1 teaspoon honey |
| 4 oz dark chocolate |
Directions:
- Combine the strawberries, almonds, coconut and honey in food processor. Pulse until a fine powder, stopping to scrape the sides occasionally.
- Scoop out about 1 rounded teaspoon of the mixture and form into a ball.
- Place the balls on a plate. Place into the freezer to chill for 15 minutes.
- Remove from the freezer. Set aside. Line a baking sheet with parchment paper.
- Melt the dark chocolate in a saucepan over low heat, stirring frequently.
- Once melted, turn off the heat. Use tongs to dip the truffle balls into the melted chocolate. Place the dipped balls on the parchment-lined baking sheet. Let sit for the chocolate to set.
