Grilled Bourbon Chicken Breasts





Serves 4 |
Ingredients:
| 1 1/2 lbs boneless skinless chicken breast halves |
| 2 tablespoons olive oil |
| 2 tablespoons Dijon mustard |
| 1/4 cup Bourbon |
| 2 tablespoons red wine vinegar |
| 2 tablespoons Worcestershire sauce |
| 2 tablespoons soy sauce |
| 1/4 cup brown sugar |
| 2 garlic cloves, minced |
Directions:
- Mix all of the coffee/pepper rub ingredients together in a bowl. Let the beef warm to room temperature, and season with the coffee/pepper rub.
- Add chicken, cover and marinate in the refrigerator for at least 2 hours or as long as overnight. Remove chicken from marinade. Discard marinade.
- Place chicken on grill over medium heat. Grill uncovered for 15-20 minutes, turning once.
