Grilled Bourbon Chicken Breasts

Ingredients:

1 1/2 lbs boneless skinless chicken breast halves
2 tablespoons olive oil
2 tablespoons Dijon mustard
1/4 cup Bourbon
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1/4 cup brown sugar
2 garlic cloves, minced

Directions:

  1. Mix all of the coffee/pepper rub ingredients together in a bowl. Let the beef warm to room temperature, and season with the coffee/pepper rub.
  2. Add chicken, cover and marinate in the refrigerator for at least 2 hours or as long as overnight. Remove chicken from marinade. Discard marinade.
  3. Place chicken on grill over medium heat. Grill uncovered for 15-20 minutes, turning once.
