Strawberry Cheesecake Cookies





Serves 12 |
Soft, creamy, rich and perfectly sweet.
Ingredients:
| 1/2 cup strawberry jam |
| 1/2 cup cream cheese |
| 2 1/2 cups flour |
| 1 teaspoon baking soda |
| 1/2 teaspoon salt |
| 1 cup unsalted butter |
| 1 cup sugar |
| 1/2 cup packed brown sugar |
| 2 large eggs |
| 1 teaspoon vanilla extract |
| 1 cup white chocolate chips |
Directions:
- Preheat your oven to 350° F. Line a baking sheet with parchment paper.
- In a small bowl, stir together the strawberry jam with the cream cheese. Set aside.
- Stir together the flour, baking soda, and salt until well mixed. Set aside.
- In a separate bowl, whisk the butter, sugar, and brown sugar in a large bowl together until light and fluffy. Then beat in the eggs one at a time until incorporated. Then stir in the vanilla extract.
- Add the flour mixture and mix until just combined. Fold in the white chocolate chips.
- Separate the dough into twelve pieces and roll into a ball. Place the cookie balls on the baking sheet. Gently press down to mildly flatten and then press a small indent into the tops.
- Fill each indent with a spoonful of the strawberry cream cheese mixture.
- Place into the oven and bake for 12-15 minutes, until the edges are golden brown.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
