Strawberry Cheesecake Cookies

Serves 12 | 
Soft, creamy, rich and perfectly sweet.

Ingredients:

1/2 cup strawberry jam
1/2 cup cream cheese
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter
1 cup sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup white chocolate chips

Directions:

  1. Preheat your oven to 350° F. Line a baking sheet with parchment paper.
  2. In a small bowl, stir together the strawberry jam with the cream cheese. Set aside.
  3. Stir together the flour, baking soda, and salt until well mixed. Set aside.
  4. In a separate bowl, whisk the butter, sugar, and brown sugar in a large bowl together until light and fluffy. Then beat in the eggs one at a time until incorporated. Then stir in the vanilla extract.
  5. Add the flour mixture and mix until just combined. Fold in the white chocolate chips.
  6. Separate the dough into twelve pieces and roll into a ball. Place the cookie balls on the baking sheet. Gently press down to mildly flatten and then press a small indent into the tops.
  7. Fill each indent with a spoonful of the strawberry cream cheese mixture.
  8. Place into the oven and bake for 12-15 minutes, until the edges are golden brown.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
