Black Bean and Chickpea Salad with Lime Vinaigrette

A wholesome medley of flavors and textures.
Ingredients:
For the Lime Vinaigrette: |
1 clove garlic, minced |
1/2 cup extra virgin olive oil |
1/3 cup fresh lime juice |
1 tablespoon honey |
1 teaspoon kosher salt |
1/2 teaspoon ground black pepper |
1/2 teaspoon cumin |
For the Salad: |
2 cans black beans, drained and rinsed, 15 oz. each |
1 can chickpeas, drained and rinsed, 15 oz. |
1 jalapeno, seeded and finely chopped |
1/2 cup finely chopped green pepper |
1/4 cup finely chopped fresh cilantro |
1/4 cup finely chopped sweet onion |
Coarse salt, for garnish |
1 avocado |
Directions:
- Pour the garlic, olive oil, lime juice, honey, salt, pepper and cumin in a small bowl. Stir together until well blended.
- Add the black beans, chickpeas, jalapeno, green pepper, cilantro and sweet onion into a large bowl. Season with a few dashes of coarse salt, stir together.
- Pour the lime vinaigrette over top and place in the refrigerator to chill for 1 hour.
- Chop the avocado before serving. Enjoy!
