Key Lime Pie Yogurt Bark

High in protein and delicious!

Ingredients:

2 tablespoons vanilla protein powder
3 1/2 tablespoons key lime juice
2 1/2 cups plain Greek yogurt
1 teaspoon vanilla extract
1 tablespoon lime zest
1 tablespoon honey
1/3 cup crushed graham crackers
1/4 cup unsweetened toasted coconut

Directions:

  1. In a medium mixing bowl, stir together the protein powder, key lime juice, Greek yogurt, vanilla extract, lime zest, and honey. Mix until smooth.
  2. Line a baking sheet with parchment paper. Spread the yogurt mixture evenly over the baking sheet. Sprinkle the crushed graham crackers and toasted coconut over the yogurt mixture. Place the baking sheet in the freezer to chill for 3 hours.
  3. Remove the baking sheet from the freezer. Lift the parchment paper off the baking sheet. Use a rolling pin to break the frozen yogurt bark into pieces. Enjoy!
