Parmesan Spinach Mushroom Pasta Skillet

Quick to make and wonderfully delicious.

Ingredients:

1 box farfalle pasta, 16 oz.
3 tablespoons olive oil
3 cloves garlic, minced
14 oz mushrooms, sliced
10 oz fresh spinach
1/2 cup vegetable broth
Salt, to taste
Black pepper, to taste
1/2 cup parmesan cheese, grated
1 teaspoon Italian seasoning

Directions:

  1. Cook the pasta according to the package instructions. Drain the water and set aside.
  2. Pour 2 tablespoons of olive oil into a large skillet, bring to medium heat. Once hot, add the mushrooms and saute for about 3 minutes, until lightly browned.
  3. Add the chopped garlic to the skillet. Cook and stir for 30 seconds.
  4. Pour in the vegetable broth. Reduce the heat to low and cook for about 2 minutes.
  5. Transfer the mushrooms to a plate. Set aside.
  6. Add the spinach to the skillet and cook for 2 minutes, until wilted. Season with salt and pepper, if desired.
  7. Add the pasta and mushrooms to the skillet, toss to combine.
  8. Sprinkle the parmesan, Italian seasoning, and remaining olive oil over the pasta, mushrooms, and spinach. Stir to combine.
  9. Spoon onto serving plates. Enjoy!
