Cucumber Dill Chicken Salad





Serves 4 |
Flavorful, versatile, and very easy to make.
Ingredients:
2 cups shredded cooked chicken breast |
1/4 cup finely chopped red onion |
1/4 cup chopped fresh dill |
1 cucumber, diced |
1/2 cup plain Greek yogurt |
2 tablespoons mayonnaise |
1 tablespoon lemon juice |
1 teaspoon Dijon mustard |
1 tablespoon olive oil |
Sea salt, to taste |
Black pepper, to taste |
Directions:
- Stir together the chicken, red onion, dill, and cucumber in a large mixing bowl.
- In a separate small bowl, combine the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and olive oil. Pour the dressing over the chicken mixture and stir to combine. Season with salt and pepper.
- Place in the refrigerator to chill for at least 30 minutes before serving.
- Serve on a bed of lettuce as an entree, in a wrap for a snack, or on crackers as an appetizer.
