Prosciutto Wrapped Mascarpone Stuffed Apricots

Enjoy this Mediterranean dessert when you're in the mood for something special.
Ingredients:
7 oz. Mediterranean apricots, dried and pitted |
12 slices prosciutto, thin slices |
3/4 cup Mascarpone cheese |
2 tablespoons powdered sugar |
1/8 teaspoon white pepper |
Directions:
- Preheat oven to 425 degrees F.
- Cut a slit in each apricot, and set aside.
- Cut each slice of prosciutto in half lengthwise, and set aside.
- Combine the Mascarpone cheese, powdered sugar, and pepper in a small bowl.
- Stuff the apricots with the cheese mixture.
- Wrap a piece of prosciutto around each apricot; secure with a toothpick. Set on an ungreased 15x10x1 inch baking pan.
- Bake, uncovered, until heated through, about 15-20 minutes.
