Serves 4 |
A Tex-Mex twist on the classic sandwich.
Ingredients:
1 lb. ground beef |
1/2 cup chopped red bell pepper |
1/2 cup chopped onion |
1 celery rib, chopped |
2 cloves garlic, minced |
1 chipotle pepper in adobo sauce, chopped |
1 teaspoon chili powder |
1 teaspoon ground cumin |
1 1/2 cups salsa |
2 tablespoons chili sauce |
4 hamburger buns |
Directions:
- Cook the beef, red pepper, celery and onion in a large skillet over medium heat until the meat browns.
- Drain off the fat. Add the garlic, chipotle pepper, chili powder and cumin and cook a couple minutes longer.
- Then stir in the salsa and chili sauce and simmer for about five minutes or so until the mixture starts to thicken.
- Some garnishes may include shredded cheese, sour cream, jalalpeños - you name it. Serve on slider or full-size rolls, with corn bread or just by itself like you might serve chili.
