Leftover Turkey Soup

Use your Thanksgiving leftovers to create one delicious dish!

Ingredients:

1 tablespoon poultry seasoning
Turkey leftovers, meat, bones, carcass
Garlic salt, to taste
16 oz green peas
2 carrots, peeled, sliced
Ground black pepper, to taste
2 celery stalks, chopped
2 cups white rice, uncooked
1 1/2 cups stuffing
2 1/2 quarts bone broth
1 onion, peeled, diced

Directions:

  1. Place carrots, poultry seasoning, turkey leftovers, broth, onion, and stuffing in a large pot. (Add water if needed) Bring contents to a boil on medium-high heat. Reduce heat and simmer for 1 hours. Remove turkey carcass and bones. Place any meat back in pot.
  2. Add pepper and garlic salt, to taste. Pour in white rice and turn heat up. Bring pot to a boil. After boiling, reduce to simmer and cook for 15 minutes.
  3. Stir in peas, continue to simmer for 10 minutes. Add more salt and pepper if needed.
Course: Dinner
