Pomegranate and Sweet Potato Salad

An incredibly delicious salad that’s great for any occasion.
Ingredients:
For salad: |
1 cup pomegranate arils |
Salt, (to taste) |
1/2 cup pumpkin seeds |
4 sweet potatoes, (cut into 1-inch cubes) |
Pepper, (to taste) |
1/2 cup feta cheese |
1 tablespoon olive oil |
For dressing: |
2 tablespoons red wine vinegar |
2 tablespoons pomegranate juice |
1 tablespoon honey |
Salt, (to taste) |
2 tablespoons olive oil |
Pepper, (to taste) |
Directions:
- Preheat oven to 400° F.
- Place sweet potato cubes into a mixing bowl, drizzle 1 tablespoon olive oil into bowl, toss together. Spread sweet potato cubes on a baking sheet, sprinkle potatoes salt and pepper. Place in oven and roast 20-30 minutes, until potatoes are tender.
- Place pumpkin seeds, feta cheese and pomegranate arils into a salad bowl. Add sweet potatoes to bowl, toss together.
- For dressing, combine honey, pomegranate juice, salt, red wine vinegar, pepper and 2 tablespoons olive oil. Stir ingredients together then drizzle over the salad mixture.
