Crispy Herbed Chicken

Serves 4 |
Simple and succulent.
Ingredients:
4 slices white bread, toasted |
1/2 cup fresh flat-leaf parsley, rinsed and dried |
1 clove garlic, peeled and chopped |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
1 tablespoon olive oil |
1/4 cup Dijon mustard |
4 boneless skinless chicken breasts |
Directions:
- Preheat oven to 400° F.
- In a food processor, pulse bread, parsley, garlic and salt and pepper until coarse crumbs form. Add the oil and pulse to combine. Transfer to a plate.
- Spread the mustard over chicken; dip chicken in the breadcrumb mixture, pressing gently to ensure that the breadcrumbs adhere to chicken.
- Place on a baking sheet. Bake until chicken is golden brown and fully cooked through, 18-20 minutes.
