Crispy Herbed Chicken

Serves 4 | 
Simple and succulent.

Ingredients:

4 slices white bread, toasted
1/2 cup fresh flat-leaf parsley, rinsed and dried
1 clove garlic, peeled and chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/4 cup Dijon mustard
4 boneless skinless chicken breasts

Directions:

  1. Preheat oven to 400° F.
  2. In a food processor, pulse bread, parsley, garlic and salt and pepper until coarse crumbs form. Add the oil and pulse to combine. Transfer to a plate.
  3. Spread the mustard over chicken; dip chicken in the breadcrumb mixture, pressing gently to ensure that the breadcrumbs adhere to chicken.
  4. Place on a baking sheet. Bake until chicken is golden brown and fully cooked through, 18-20 minutes.
