Veggie and Breakfast Sausage Lasagna





Serves 8 |
Wholesome, easy and totally delicious!
Ingredients:
| 1 box lasagna noodles, 16 oz. |
| 2 lb breakfast sausage |
| 2 sweet onions, chopped |
| 6 cloves garlic, minced |
| 1 cup diced carrots |
| 1 bag fresh spinach, 16 oz. |
| 1 jar pasta sauce, 24 oz. |
| 1 container Ricotta cheese, 15 oz. |
| 4 cups shredded mozzarella cheese, more for topping |
| 2 tablespoons Italian seasoning, more for topping |
Directions:
- Cook lasagna noodles according to package directions and drain water.
- Preheat oven to 350° F.
- Cook sausage, onions, garlic, and carrots in a large pan over medium heat, until sauce is thoroughly cooked, and vegetables are tender.
- Grease a large baking dish with non-stick cooking spray. Layer ingredients pasta sauce, noodles, ricotta cheese, sauce and veggie mix, spinach, shredded cheese. Repeat with remaining ingredients.
- Finish the top layer with shredded cheese and Italian seasoning. Cover with foil and for 45 minutes.
- Cut lasagna into 8 pieces and enjoy!
