Shrimp Creole

Serves 6 | 
A Southern spicy dish that packs the heat.

Ingredients:

1 tablespoon vegetable oil
1 yellow onion, chopped
2 tablespoons cayenne pepper
1 tablespoon dried thyme leaves
2 bay leaves
6 green onions, chopped
1 can tomatoes, undrained, 15 oz.
1 cup chopped celery
3 oz tomato paste
1 green bell pepper, thinly sliced
3 lb shrimp, peeled
2 cloves garlic, chopped
Cooked rice, for serving

Directions:

  1. Heat oil in a heavy skillet. Once hot, add onions, celery, bell pepper, garlic, thyme, cayenne pepper and bay leaves. Saute for about 5 minutes, until vegetables are tender.
  2. Add tomatoes and tomato paste to skillet and simmer for 15 minutes.
  3. Add shrimp, simmer for 10 minutes.
  4. Serve over hot rice.
