Greek Gyro Sandwich

Rich with flavors and so simple to prepare.

Ingredients:

1 yellow onion, finely chopped
1 tablespoon dried ground rosemary
1 tablespoon dried marjoram
1 tablespoon finely minced garlic
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 lb ground lamb
6 pita bread
Prepared tzatziki sauce, for serving
Feta cheese, for serving

Directions:

  1. Pour the chopped onion into a blender and pulse for about 15 seconds. Transfer onion to a tea towel. Gather up the ends of the towel and squeeze until almost all of the liquid is removed. Discard the liquid.
  2. Return the onion to the blender. Add rosemary, marjoram, garlic, kosher salt, black pepper and lamb to the blender. Pulse for about a minute, until ingredients create a fine paste.
  3. Scoop the paste out of the blender and into a loaf pan. Gently press into the pan. Fill a larger baking dish with water and place the loaf pan into the water. Place in the oven to bake for 1 hour. Remove from the oven and place the loaf pan on a cooling rack. Allow to sit for 15 minutes.
  4. Slice and serve on pita bread with tzatziki sauce and feta cheese.
