Easy Chicken Tortilla Soup

Serves 4 | 
Hearty and oh so delicious!

Ingredients:

4 cups chicken stock
1 can diced tomatoes with juice
2 tablespoons lime juice
1 can green chiles, un-drained
2 tablespoons cilantro leaves, chopped
1 carrot, diced
2 green onions, chopped, green parts only
3/4 cup corn kernels
1 cup chopped cooked chicken
1/2 cup shredded Monterey Jack cheese
Tortilla chips, for serving

Directions:

  1. In a large stockpot, simmer chicken stock with tomatoes, lime juice, green chiles, cilantro, carrot, green onions and corn for 45 minutes.
  2. Add cooked chicken about 5 minutes before done.
  3. Serve soup in bowls topped with shredded cheese and crushed tortilla chips.
