Fresh Organic Artichokes

California’s own Lakeside Organic Gardens is the largest family-owned and operated organic grower in the United States. Growing over 50 varieties of organic produce on their 55-acre farm. A fresh harvest of artichokes have arrived this week. When selecting an artichoke, look for one with a healthy green color, compact center leaves and a firm feel. Artichokes have a uniquely nutty flavor that makes them a great choice for steaming, roasting or grilling, made into dips or paired with chicken, lamb and steak. They are high in fiber and essential vitamins, minerals and antioxidants, like, vitamins B6, C & K, phosphorus, magnesium, iron and potassium! Stop by our produce department this week to pick up Lakeside Organic Gardens Organic Artichokes.

How to Prepare an Artichoke

Thoroughly rinse and pat dry. Use a serrated knife to trim about 1/3 off of the top and trim a small portion of the bottom stem off. Trim the thorns off of the leaf tips.

Now you’re ready to steam the artichoke

Add 1 inch of water to a large pot. Place a steamer basket inside the pot and place the artichoke in the basket. Bring the water to a boil over high heat. Then reduce the heat to a simmer. Cover and cook for 34-45 minutes. The artichoke is ready to enjoy when the stem is fork-tender, and you can easily peel away the outer leaves.
