The Tastiest Tailgate Tri Tip Chili
The gold standard of homemade chili.
Ingredients
- 3 lb. beef tri tip, cut into 1/2-inch cubes
- 3 jalapeno peppers, diced
- 1/2 cup steak sauce
- 1 can diced tomatoes, 15 oz.
- 1 tablespoon Morton and Bassett paprika
- 4 cups beef stock
- 1 green bell pepper, diced
- 8 slices bacon/li>
- 6 tablespoons Morton and Bassett chili powder
- 2 teaspoons salt
- 1/4 cup vegetable oil
- 1 sweet onion, chopped
- 1 can corn, 11 oz.
- 6 cloves garlic, crushed
- 1 teaspoon Morton and Bassett ground black pepper
- 1 tablespoon Morton and Bassett ground cumin
- 2 tablespoons Morton and Bassett oregano
Directions
Place the bacon in a large skillet. Bring to medium-low heat. Cook for about 10 minutes, until browned, flipping the bacon when it begins to curl. Transfer to a paper towel lined plate to drain. Once cool enough to touch, crumble the bacon into small pieces.
Pour the vegetable oil into a soup pot. Bring to medium heat. Separate the tri tip into four piles. Cook one pile at a time for about 5 minutes. Transfer the cooked tri tip to a plate and continue the process with the remaining tri tip. Place the tri tip back in the soup pot. Add the diced jalapeno, crushed garlic, chopped onion, cumin, paprika, and chili powder to the pot. Cook and stir for 5 minutes, until the onions are translucent.
Add the tomatoes, bacon, steak sauce, salt and black pepper to the pot. Stir together and turn up the heat to high and bring to a boil.
Reduce the heat to low and stir in the diced bell pepper and corn. Let the chili simmer for around 3 hours, stirring occasionally. Once the tri tip is very tender, the chili is ready to serve.
