The New Cheese on the Block

We are excited to announce a few new arrivals to Bianchini’s Cheese department from Blakesville Creamery. Located in Port Washington, Wisconsin, Blakesville Creamery began their goat cheese production just a few years ago in the summer of 2020. Originally the dairy was called Lake Breeze (now the name for one their cheeses), it was renamed Blakesville Creamery, to honor the village that was located on the land prior to the dairy. Blakesville is a farmstead creamery, meaning the cheese is made by hand on the same farm that the animals are raised and where the milk is collected. This process preserves the purity, quality, flavor, and freshness of the milk. Stop by our cheese department to find Blakesville Creamery Fresh Chèvre, Lake Breeze, and Lake Effect.

Fresh Chèvre has a bright, clean flavor and is remarkably spreadable. Fantastic when spread on crostini, with fresh herbs on bruschetta, atop pizzas and pastas, stirred with fresh berries for dessert, or simply enjoy with crackers. Swap it for cream cheese on your next bagel for a delightful burst of fresh cream flavor.

Lake Breeze is a soft-ripened goat cheese with a geotrichum rind, meaning the rind is lightly colored with a distinctive wrinkly texture. Lake Breeze is described as bright and citrusy with a hint of saline and a touch of earthy aroma. Wonderful when paired with a salad, especially one that is warmed, or add a slice to a pizza fresh out of the oven and let the cheese melt into a pool of semi-melted lusciousness.

Lake Effect is also a soft-ripened goat cheese but with a bloomy rind, meaning the rind is soft and marshmallow-like with a snowy white color. The texture is fudgy when young, becoming soft and gooey as the creamline forms from the rind toward the center. Lake Effect is described as buttery with noticeable mushroom notes, and a woody aroma, like walking through a forest. Fantastic on a toasted baguette or on a cheese tray for hors d’oeuvres.

Park City Creamery combines Belgian cheese-making techniques with the Utah terroir. Fromager Corinne Zinn has created a line of European-style artisan cheeses sourced from cow and goat milk from local Utah dairy farms.
