National Pecan Day

Did you know that this Sunday, April 14th, is National Pecan Day? They’re a member of the hickory family, pecan is an Algonquian word that means “a nut requiring a stone to crack”. Pecans hold the distinction for being the only major tree nut that’s indigenous to North America. And due to their versatility, they great for both snacking and baking. They’re an excellent source of magnesium, phosphorus, manganese, copper, zinc, iron, vitamin E, and dietary fiber. Majorly Delicious Pimento Cheese

The Masters Golf Tournament, the first of four major professional golf championships, is set to begin this Thursday, April 11th and end on Sunday, April 14th. The Masters Tournament has been held annually in Augusta, Georgia, since 1934. To kick off the event, Bianchini’s famous Pimento cheese spread will be available. Inspired by the traditional pimento cheese sandwich served during the Masters Tournament, we prepare our pimento cheese spread using a combination of aged cheddar, Jack, and cream cheeses, with diced pimentos, a dollop of mayonnaise, with a few secret ingredients that make it extra special and unique to Bianchini’s. Our Pimento cheese spread is highly versatile, enjoy it on crackers, spread across a toasted English muffin, or as a burger topper. Since April is Grilled Cheese Sandwich Month, why not try a fresh take on the pimento sandwich? We suggest spreading our pimento cheese spread across your favorite bread, then scattering pickled jalapeños across the pimento. Place a cooked chicken cutlet on the pimento spread and jalapeño, then drizzle of honey atop the chicken cutlet for a little sweetness. Butter a pan and toast the sandwich until cheese spread has melted. Talk about delicious!

30 Days of Grilled Cheese

April has the honor of playing host to one of the tastiest foodie celebrations of the year, Grilled Cheese Month. In the coming weeks, we will be highlighting several delectable cheeses that help create some of the yummiest homemade grilled cheese sandwiches. To kick off Grilled Cheese Month, we’d love to share with you Humboldt Fog. It’s a soft-ripened goat cheese with a distinctive ribbon of edible vegetable ash. Each wheel is handcrafted in Humboldt County California by expert cheesemakers. Humboldt Fog has prominent flavors of buttermilk and fresh cream are complimented by notes of floral and herbs, with a clean citrus finish. As the cheese matures, a cream-line develops, and the flavors intensify. Try our recipe below using Humboldt Fog and keep an eye out for more grilled cheese recipes in the coming weeks.

Humboldt Fog Grilled Cheese Sandwich

Cheesy, crispy and mouthwateringly good!

Ingredients

  • 1/4 – 1/2 cup Humboldt Fog goat cheese
  • 2 slices cinnamon raisin bread
  • 3 slices prosciutto
  • 1 tablespoon butter

Directions

Spread the Humboldt Fog goat cheese between the two slices of cinnamon raisin bread. Place the prosciutto on one piece of bread and sandwich the slices together.

Preheat a small nonstick skillet over medium-high heat. Melt the butter in the skillet.

Add the sandwich to the skillet and cook on one side until the bread is golden brown, about two minutes. Flip and cook for another two minutes, or until the bread is golden brown. Cut in half and serve immediately.

Servings 1 sandwich

There’s nothing quite like opening your refrigerator the day after a holiday meal and deciding what to make with the delicious foods. Let us help by offering a delectable fettuccine recipe that delivers big flavors with each and every bite.

Creamy Ham and Asparagus Fettuccine

Ingredients

  • 12 oz. dry fettuccine noodles
  • 8 oz. fresh asparagus, trimmed and cut into 2-inch pieces
  • 2 cups heavy cream
  • 1/2 cup butter
  • 3/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1 pinch cayenne pepper
  • 1/2 pound cooked ham, diced

Directions

Bring a large pot of lightly salted water to a boil. Add the fettuccine pasta and cook for 8-10 minutes, or until the pasta is al dente. Stir the asparagus into the pot and cook for 5 minutes. Drain the water.

Meanwhile, heat the cream and butter in a medium saucepan over medium heat until the mixture begins to bubble; stir in the Parmesan, garlic powder, pepper, and cayenne. Continue cooking until the mixture thickens, stirring occasionally. Stir in ham until heated through.

Toss the pasta and asparagus in the sauce until well combined. Serve immediately.

A New Season of Baseball

The MLB Opening Day games are slated for this Thursday, March 28th, with all 30 teams set to play in stadiums across the country.
