Grilled Steak and Tabbouleh Salad

Simple yet oh so delicious!
Ingredients:
1 beef top round steak |
1/3 cup fresh lemon juice |
1/4 cup olive oil |
1/4 cup finely chopped fresh parsley |
1 package tabbouleh mix, 6 oz. |
1 cup chopped tomato |
Directions:
- Combine lemon juice, olive oil and parsley in small mixing bowl. Pour 1/3 cup into a separate container, cover and refrigerate. Place beef steak and remaining lemon juice mixture in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or overnight, turning occasionally.
- Follow package directions to cook tabbouleh mix, omitting any oil. Add tomato and 1/3 cup reserved marinade to tabbouleh. stir to combine.
- Preheat grill to medium.
- Remove steak from marinade. Place steak on grill, cover and cook for about 5 minutes, flip steak and cook for an additional 5 minutes.
- Remove from grill. Let sit for 5 minutes, then cut steak into thin slices. Season with salt and pepper.
- Spoon tabbouleh into 4 bowls. Top tabbouleh with steak slices.
