Stovetop Black Bean Fajita Pasta

A vegetarian version with all the flavors you love.

Ingredients:

1 cup vegetable stock
2 cups rotini pasta
1 can diced tomatoes, 15 oz
1 can black beans, drained and rinsed, 15 oz
1 can corn kernels, 7 oz
1/4 cup sliced red onion
2 bell peppers, sliced
1 teaspoon salt
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon cumin
1 cup shredded mozzarella cheese
1 tablespoon lime juice
Fresh cilantro, for garnish

Directions:

  1. Pour the vegetable stock into a large pot. Add the rotini pasta, diced tomatoes, black beans, corn kernels, red onion and bell pepper. Stir together. Sprinkle the salt, chili powder, paprika and cumin over top, then stir together. Place the lid on the pot and bring to a boil on high heat. Then reduce heat to low. Cook for 15 minutes, stirring every few minutes.
  2. Before serving, sprinkle the shredded mozzarella over top and drizzle the lime juice. Stir together and spoon into serving bowls.
  3. Garnish with fresh cilantro and enjoy!
