Cucumber Blueberry Salad

Serves 6 |
Highly flavorful and highly nutritious.
Ingredients:
2 cucumbers |
1 pint blueberries |
1 sprig mint, leaves chopped |
1/2 cup sliced almonds |
1 tablespoon honey |
2 tablespoons olive oil |
3 tablespoons lemon juice |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Chop the cucumber and transfer the pieces to a mixing bowl. Add the blueberries, mint, and sliced almonds to the mixing bowl. Toss together. Set aside.
- Whisk together the honey, olive oil, lemon juice, salt and pepper in a small bowl.
- Pour the dressing over the salad and toss to coat. Refrigerate until ready to serve.
