Cucumber Blueberry Salad

Highly flavorful and highly nutritious.

Ingredients:

2 cucumbers
1 pint blueberries
1 sprig mint, leaves chopped
1/2 cup sliced almonds
1 tablespoon honey
2 tablespoons olive oil
3 tablespoons lemon juice
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Chop the cucumber and transfer the pieces to a mixing bowl. Add the blueberries, mint, and sliced almonds to the mixing bowl. Toss together. Set aside.
  2. Whisk together the honey, olive oil, lemon juice, salt and pepper in a small bowl.
  3. Pour the dressing over the salad and toss to coat. Refrigerate until ready to serve.
