Crispy Flatbread with Brie, Cranberries & Toasted Walnuts and a Hot Honey Drizzle

Sweet and savory with a gentle spicy bite.

Ingredients:

2 pieces flatbread, 8 inches each
1/2 cup chopped walnuts
1/4 cup honey
1/2 teaspoon chili flakes
1 tablespoon olive oil
8 oz brie cheese, thinly sliced
1/2 cup dried cranberries
1 teaspoon fresh thyme leaves
1/4 teaspoon salt

Directions:

  1. Heat oven to 400°F. Place a baking sheet inside to warm.
  2. Toast the walnuts in a dry skillet over medium heat until they become fragrant.
  3. Combine the honey and chili flakes in a small pan. Stir on low until the honey is fluid. Remove the pan from the heat.
  4. Remove the baking sheet from the oven. Brush the olive oil across the sheet.
  5. Set the flatbreads on the baking sheet. Layer on the brie, then sprinkle with cranberries and toasted walnuts.
  6. Place in the oven and bake for 8-10 minutes, until the brie is melted and the flat bread edges are crisp and golden.
  7. Transfer the flatbread to a large plate. Drizzle with the hot honey. Top with the thyme leaves and a sprinkle of salt.
  8. Slice the flatbread into wedges. Enjoy!
