Grilled Salmon Citrus Kabobs

Salmon rubbed with select spices and grilled to perfection.

Ingredients:

+ Add All Ingredients to Shopping List
Olive oil cooking spray+ Add to Shopping List
1 teaspoon kosher salt+ Add to Shopping List
2 teaspoons sesame seeds+ Add to Shopping List
16 bamboo skewers, (soaked in water for 1 hour)+ Add to Shopping List
1 1/2 lb skinless wild salmon fillets, (cut into cubes)+ Add to Shopping List
2 tablespoons chopped fresh oregano+ Add to Shopping List
1/4 teaspoon crushed red pepper flakes+ Add to Shopping List
2 lemons, (sliced very thin)+ Add to Shopping List
1 teaspoon ground cumin+ Add to Shopping List

Directions:

  1. Heat grill to medium and spray grates with olive oil spray.
  2. Combine sesame seeds, oregano, red pepper flakes and cumin in a mixing bowl. Set aside.
  3. Thread and alternate salmon and folded lemon slices on bamboo skewers.
  4. Lightly coat kabobs with olive oil spray. Season with kosher salt and spice mix.
