Porterhouse Steak with Jalapeño Butter

Ingredients:

1 stick unsalted butter, softened
2 cloves garlic, minced
1 fresh jalapeño chile, seeded and finely chopped
1 porterhouse steak, room temperature
Coarse salt
Freshly ground black pepper

Directions:

  1. Prepare grill for medium-high heat.
  2. Combine butter, garlic and jalapeño in a small bowl; set aside.
  3. Season both sides of porterhouse steak with salt and black pepper. Set steak over the hottest part of the grill. Cover grill and cook steak for 3 minutes. Turn steak over and cook, covered, 3 minutes more. Move steak to cooler side of grill. Cover grill and cook steak for 7 minutes. Turn steak over and grill, covered, 7 minutes more or until desired degree of doneness is reached.
  4. Remove steak from grill and let rest 10 minutes.
  5. Serve with jalapeño butter.
