Caramelized Onion Mashed Potatoes

Serves 6 | 
Buttery smooth, creamy and slightly sweet.

Ingredients:

3 lb Yukon gold potatoes, peeled and chopped
1/4 cup sour cream
4 tablespoons unsalted butter, halved
Salt, to taste
Ground black pepper, to taste
1 tablespoon olive oil
2 teaspoons minced garlic
1 white onion, chopped
1 teaspoon soy sauce
1 teaspoon packed brown sugar

Directions:

  1. Place potatoes in a large pot and fill water. Bring to boil over medium heat. Cook until the potatoes are soft.
  2. Drain the water from the pot. Add in sour cream and 2 tablespoons of butter. Mash together very well. Season with salt and pepper. Set aside.
  3. Pour olive oil into a large skillet. Bring the skillet to medium heat. Add the remaining butter and let melt. Add garlic and onions to the skillet and saute until garlic and onions begin to become golden and caramelized.
  4. Add soy sauce and brown sugar to the skillet and stir together.
  5. Add the caramelized onions to the mashed potatoes and stir together until well combined.
