Pesto Pasta with White Beans and Broccoli





Serves 4 |
A protein-packed 30-minute meal.
Ingredients:
1 lb mini shell pasta |
2 tablespoons olive oil |
4 cloves garlic, minced |
4 cups chopped broccoli |
Sea salt, to taste |
Black pepper, to taste |
1 can white beans, drained and rinsed, 15 oz |
1 cup prepared pesto sauce |
Directions:
- Cook the pasta according to the package directions. Set aside.
- Bring a large pan to medium heat. Add 1 tablespoon of olive oil to the pan, then add the minced garlic. Cook for about a minute, until the garlic is fragrant. Then add the broccoli and a big pinch of salt and black pepper. Cook and stir the broccoli for 5-7 minutes, until tender.
- Pour in the white beans and cook and stir for 2 minutes. Add in the cooked pasta and the pesto sauce. Stir together until well mixed. Season with salt and pepper to taste. Cook until the pasta is warmed through.
- Spoon onto serving plates. Enjoy!
