Grilled Chicken and Broccoli Bowls with a Creamy Garlic Sauce





Serves 2 |
Great for busy nights and meal prepping.
Ingredients:
| 2 boneless, skinless chicken breasts |
| 2 tablespoons olive oil |
| Salt, to taste |
| Black pepper, to taste |
| 2 cups broccoli florets |
| 1 tablespoon lemon juice |
| 1 cup rice |
| 3 cloves garlic, minced |
| 1/2 cup heavy cream |
| 2 tablespoons butter |
Directions:
- Drizzle the chicken breasts with 1 tablespoon of olive oil. Sprinkle with salt and pepper. Bring a grill pan or skillet to medium-high heat. Cook the chicken breasts until cooked through and lightly charred, flipping once. Remove from the heat. Slice into strips. Set aside.
- Preheat the oven to 400°F.
- Place the broccoli in a mixing bowl. Drizzle the remaining 1 tablespoon of olive oil over the broccoli. Then spritz with the lemon juice and season with a pinch of salt. Toss to coat. Spread the broccoli on a baking sheet. Place in the oven to roast for 15-20 minutes, until crisp-tender.
- Cook the rice in a rice cooker or on the stovetop. Remove from heat and fluff occasionally.
- Melt the butter in a saucepan over medium heat. Then add the minced garlic, saute until fragrant. Stir in the heavy cream and season with salt and pepper, and simmer until the cream is thickened.
- Add the rice, chicken, and broccoli to serving bowls. Drizzle with the garlic sauce and enjoy!
