Bacon and Potato Egg Scramble





Serves 4 |
Easy to make and incredibly delicious.
Ingredients:
| 4 strips bacon, cooked and chopped |
| 2 russet potatoes, peeled and diced |
| 1/4 cup sliced green onions |
| 2 tablespoons milk |
| 1/3 cup butter |
| 6 eggs |
| 1/4 teaspoon ground black pepper |
Directions:
- Melt butter in a large skillet over medium heat. Once hot, add potatoes and onions. Cook for 10 minutes, stirring often.
- In a bowl, beat together eggs, milk and pepper. Mix in bacon. Pour mixture over potatoes. Cook, without stirring, until mixture begins to set around the edges and on the bottom. Using a large spoon or spatula, lift and fold partially cooked egg mixture so uncooked portion flows underneath. Continue cooking for 4-5 minutes.
