Mole-Style Pork Chops

Serves 4 | 
Just the right amount of sweet and savory.

Ingredients:

1 teaspoon unsweetened cocoa powder
1 teaspoon ground chipotle chile peppers
1 teaspoon ground cumin
1 teaspoon smoked paprika
3 teaspoons brown sugar
1/2 teaspoon salt
4 bone-in center-cut pork chops

Directions:

  1. Heat a grill pan over medium heat.
  2. In a small bowl, combine cocoa powder, chipotle chile peppers, cumin, paprika, sugar and salt. Rub mixture onto both sides of pork chops then lightly spray chops with cooking spray.
  3. Place chops on grill pan, cover and cook about 3 minutes per side or until done. Allow chops to sit for a few of minutes before serving.
