Baked Potato Skins with Pizza Toppings

The perfect weekend snack.

Ingredients:

1/2 cup Pepperoni, diced
1/2 stick butter, melted
6 oz shredded cheese, your preference
8 Russet potatoes
Kosher salt, to taste
Canola oil, to grease pan
14 oz Pizza sauce
Additional pizza toppings, optional

Directions:

  1. Preheat oven to 400° F.
  2. Clean and scrub each potato. Rub with canola oil, season with light sprinkle of salt. Place in oven, bake 30-45 minutes, skin should become crisp.
  3. Remove from oven, let cool long enough to handle with bare hands. Cut each potato in half, use spoon to scoop out center of potatoes. (Leave some around edges and a bit in the middle.) Brush the inside of the potatoes with melted butter. Place on baking sheet, bake additional 5-7 minutes. Remove from oven and let cool.
  4. Put a spoonful of pizza sauce in each potato, top with cheese, place on diced pepperoni and other toppings. Place in oven, bake for 2-3 minutes.
  5. Remove from oven and serve soon afterward.
