Chicken Satay with Peanut Sauce

Serves 8 | 
Perfectly flavored and easy to prepare.

Ingredients:

2 cloves garlic, chopped
2 tablespoons say sauce
2 tablespoons lime juice
1 tablespoon ground turmeric
1 lb chicken breast, boneless, skinless
8 bamboo skewers, soaked in water for 30 minutes
16 mushroom caps
1 cup peanut sauce
Jasmine rice, steamed, optional

Directions:

  1. Combine garlic, soy sauce, lime juice and turmeric in a large bowl. Cut chicken breasts in ½-inch pieces and toss in the marinade until evenly coated. Marinate for 2 hours in refrigerator.
  2. Preheat broiler or barbecue grill.
  3. Remove chicken pieces from marinade. Thread on skewers, placing a mushroom on each end.
  4. Place skewers under broiler or on the barbecue for 4 to 5 minutes on each side. Serve with jasmine rice and peanut sauce on the side.
